Some chocolatey hot cross bun goodness.




 
 
 

Oh my. First attempt at hot cross buns and I must say... bit dangerous having 11 more of the little buggers sitting there while I am home alone with the kids.

Just used the Thermomix EDC recipe except did chocolate chips instead of sultanas. "Apparently" the recipe also had an egg in it. Meh, couldn't tell it was missing.

Off to make a cup of tea to have with the other half of my bun. Nap and quiet time in the house won't last all afternoon.

Apple slice.

I had some apples that weren't getting eaten in a hurry so decided to use them up in something scrummy. Scrummy is definitely what it was!

Apple Slice





This recipe is using a Thermomix, but could easily be adapted without one.

- Preheat your oven to 180degrees
- Grease and line your baking / slice tin

Apple filling

6 x apples (They always say use Granny Smith when cooking, I just used what I had...)
1/2 cup of water
2 Tbs of sugar
1 Tbs of cinnamon


- Peel and slice apples into chunks, add them into your bowl with the water, sugar and cinnamon.
- Cook for 10 mins / 100 degrees / reverse Speed 1 or until your apples are nice and soft.
- Then just give them a quick blitz (4 seconds / speed 5) to chop them up ready for your slice
- Set aside

Slice
185g of butter
2 eggs
1 cup of castor sugar
1 cup of plain flour
1/2 cup of self raising flour

- Soften your butter ( 1 minute / 60 degrees / speed 1)
- Add castor sugar or blitz until combined
- Add eggs and blitz again
- Add the plain and self raising flour and combine it all to make a batter




- Pour half of your slice mixture into your tin

- Cover mixture with a layer of your apples

- Finish with the other half of your slice mixture to cover your apples

- Put it into the oven and bake for approx 45 minutes or until golden brown

- When its out of the oven, sprinkle with some sugar while its nice and hot

Serve warm with some custard or icecream. Its pretty devine.

Almond Biscuits


An extremely quick, simple and delicious recipe for some biscuits (from the Thermomix EDC book)

Ingredients











100g whole almonds (or any type of nut would be nice)
150g plain flour
100g sugar
130g room temperature butter
2 tbs vanilla essence

What to do:

1. Preheat your over to 180c.



2. Get your trays ready.



3. Blitz your almonds and sugar for about 30 seconds on speed 8



4. Add all the other ingredients (flour, butter, vanilla essence)


5. It says to only mix for 10 seconds on pulse but I had to do it for about 25 seconds as nothing was    mixed. Just be careful not to over do it.


6. You should end up with a crumb mix.


7. Roll it into small balls


8. Bake for approx 18 mins or until they go brown.


9. Wait until your mum and sister come over and then watch them eat them all!

Spinach, Bacon & Parmesan Quiche.



Since it's been really hot here the past few days, I thought I would make Dad'n something different to take for lunches, as sandwiches don't hold up the best in this weather. At the time, I had juch finished talking with a friend about easy meal idea's... so this one was on the top of my head when I walked into the kitchen!

I made my pastry and filling in the thermomix but as per most of my recipes you can take the ingredients and methods and just do them the way you normally would.

Ingredients:
Pastry










200g of plain flour
100b butter (chilled and cut into pieces)
Pinch of salt
50g of chilled water

Filling

1 onion
100g of bacon
100g of baby spinach
4 eggs
3/4 cup of cream
1/2 cup of milk
1/3 cup of parmesan cheese
salt & pepper to taste


Thermomix instructions for pastry:

1. Put flour, butter and salt in the TM bowl & mix for 10 seconds on speed 6
2. Set dial to closed lid, add water & knead for 15 second on interval speed to form the dough
* Add a little more water if you need to make it bind a little more
3. Empty out your mixture on a floured board and knead a little bring it all together
4. Put your dough in a bowl and into the fridge for 15 minutes












5. Roll it out and its ready to go! About 3 minutes to put together then just the resting time.
6. Time to line your greased quiche dish and fix your edges.











Instructions for filling:

1. Peel onion & quater
2. Place in TM bowl and chop for 3 seconds on speed 7
3. Add bacon that has been chopped into pieces to the onion
4. Add a drizzle of olive oil

5. Saute the onion & bacon for 3 minutes on 100c on REVERSE speed 1
6. Add eggs (lightly wisked), milk, cream, parmasen cheese (grated)
7. Mix for 10 seconds on REVERSE speed 3
8. Add baby spinach leaves and mix for a further 20 seconds on REVERSE speed 3 until its all combined
9. Pour it all into your pastry lined quiche dish and its ready for the oven!












10. Bake for 30 minutes in a 200c oven











**** If I was making this to eat straight away or had more time, I would have blind baked the pastry for 10 minutes by covering it with baking paper and putting some rice in the bottom but 9 out of 10 times I dont have the time so pour the filling straight on to the raw pastry)****

Choc Banana Muffins! Always a winner here.


It was Sunday afternoon baking time here, had to think about filling hubby's lunchbox up for the week! Choc banana muffins are his all time favourite so I didn't have to think for too long when i realized I had the sad looking banana's left over from yesterdays "food shopping day clean out".

I whip mine up in about 2 minutes in my Thermomix but it's a pretty standard recipe that would be fine in your mixer or even the bowl and wooden spoon.

If you do have a Thermy though, follow the recipe below.

Ingredients:










Wet ingredients

100 grams of butter
250grams of milk
1 egg
1 teaspoon of vanilla essence
2 ripe bananas

Dry ingredients

300 grams of self raising flour
100 grams of caster sugar
Pinch of salt
80 grams of Choc chips

1. Turn your oven on to 180 degrees (fan forced oven) and grease your muffin tray

2. Add your butter to your TM bowl and melt for 2 mins at 60 C on speed 4

3. Add milk, egg, vanilla essence & bananas. Mix for 3 seconds on speed 4

4. Add dry ingredients (except Choc Chips). Mix for 30 seconds on speed 4

5. Add choc chips and mix for 30 seconds of speed 3 REVERSE

6. Spoon into your muffin tin. I find using a tablespoon and a teaspoon the easiest way to fill your tins without dripping it everywhere












7. Bake in the oven for 13 - 15 minutes

8. Scrummy!
