Muesli Bars


This was a recipe that my sister gave me a few months back.

It came home with me with good intentions then got filed in the overflowing "must try" folder.

With Kinder lunchboxes high on my priority at the moment, I decided to dig it back out and give them a go.

I'm not sure how long they will last in the pantry though, as I have taken quite the liking to them! Must.save.for.the.kids!

They are easy. I like easy.

It's the kind of recipe that you get to chuck in whatever you have in the pantry. Love those recipes.

Ingredients:

1 cup shredded coconut
1 cup of oats
1/2 cup of sesame seeds
1/2 cup of sunflower seeds
1 cup of sultanas
1/3 cup of sugar
125g of butter
140g of honey
Other optional ingredients: chia seeds, dried apricots, pepita's, wheat germ, LSA ect....

Method:

  • In a fry pan, dry roast all your dry ingredients for about 7 minutes until they are nice and toasted (not the sultanas or dried fruit).

  • Let that cool down a little and enjoy the delish smell in your kitchen ;)  Time to add your sultanas / dry fruit.

  • In a saucepan, bring your butter, sugar and honey to the boil then bring it back to a simmer for 7 minutes while stirring. Don't take your eyes off it.

  • Pour your sticky butter into your dry ingredients and mix it well.

  • Pop the finished mix into a lined slice tray and refrigerate.

  • After a couple of hours your free to slice and dice it as you please. The kids liked theirs chopped into little mouthful squares.

  • (Note: This recipe is quiet sweet. Especially if you have the sultanas or dried fruit. So feel free to drop the sugar / honey amount, I will be next time.)

Some chocolatey hot cross bun goodness.




 
 
 

Oh my. First attempt at hot cross buns and I must say... bit dangerous having 11 more of the little buggers sitting there while I am home alone with the kids.

Just used the Thermomix EDC recipe except did chocolate chips instead of sultanas. "Apparently" the recipe also had an egg in it. Meh, couldn't tell it was missing.

Off to make a cup of tea to have with the other half of my bun. Nap and quiet time in the house won't last all afternoon.

Cookie cutter kinda day.

Boo decided that she wanted to use cookie cutters today! Filled in our morning fabulously.

A simple, not to sweet, plain biscuit recipe that was just perfect for us to cookie cut the morning away.



Ingredients:

250g butter
1 cup sugar
3 eggs
3 cups of plain flour
1 tsp baking powder


Cream your butter and sugar

Add eggs in one at a time and mix between each egg

Add flour and baking powder

Mix well and then turn dough mixture out on to some glad wrap

Wrap it up and pop it in the fridge until nice and firm


Roll it out and start cutting your cookies


Bake cookies at 180c until golden brown (approx 10 minutes)


Spend afternoon keeping the toddler away from the biscuit tin!

Apple slice.

I had some apples that weren't getting eaten in a hurry so decided to use them up in something scrummy. Scrummy is definitely what it was!

Apple Slice





This recipe is using a Thermomix, but could easily be adapted without one.

- Preheat your oven to 180degrees
- Grease and line your baking / slice tin

Apple filling

6 x apples (They always say use Granny Smith when cooking, I just used what I had...)
1/2 cup of water
2 Tbs of sugar
1 Tbs of cinnamon


- Peel and slice apples into chunks, add them into your bowl with the water, sugar and cinnamon.
- Cook for 10 mins / 100 degrees / reverse Speed 1 or until your apples are nice and soft.
- Then just give them a quick blitz (4 seconds / speed 5) to chop them up ready for your slice
- Set aside

Slice
185g of butter
2 eggs
1 cup of castor sugar
1 cup of plain flour
1/2 cup of self raising flour

- Soften your butter ( 1 minute / 60 degrees / speed 1)
- Add castor sugar or blitz until combined
- Add eggs and blitz again
- Add the plain and self raising flour and combine it all to make a batter




- Pour half of your slice mixture into your tin

- Cover mixture with a layer of your apples

- Finish with the other half of your slice mixture to cover your apples

- Put it into the oven and bake for approx 45 minutes or until golden brown

- When its out of the oven, sprinkle with some sugar while its nice and hot

Serve warm with some custard or icecream. Its pretty devine.

Almond Biscuits


An extremely quick, simple and delicious recipe for some biscuits (from the Thermomix EDC book)

Ingredients











100g whole almonds (or any type of nut would be nice)
150g plain flour
100g sugar
130g room temperature butter
2 tbs vanilla essence

What to do:

1. Preheat your over to 180c.



2. Get your trays ready.



3. Blitz your almonds and sugar for about 30 seconds on speed 8



4. Add all the other ingredients (flour, butter, vanilla essence)


5. It says to only mix for 10 seconds on pulse but I had to do it for about 25 seconds as nothing was    mixed. Just be careful not to over do it.


6. You should end up with a crumb mix.


7. Roll it into small balls


8. Bake for approx 18 mins or until they go brown.


9. Wait until your mum and sister come over and then watch them eat them all!

Choc Banana Muffins! Always a winner here.


It was Sunday afternoon baking time here, had to think about filling hubby's lunchbox up for the week! Choc banana muffins are his all time favourite so I didn't have to think for too long when i realized I had the sad looking banana's left over from yesterdays "food shopping day clean out".

I whip mine up in about 2 minutes in my Thermomix but it's a pretty standard recipe that would be fine in your mixer or even the bowl and wooden spoon.

If you do have a Thermy though, follow the recipe below.

Ingredients:










Wet ingredients

100 grams of butter
250grams of milk
1 egg
1 teaspoon of vanilla essence
2 ripe bananas

Dry ingredients

300 grams of self raising flour
100 grams of caster sugar
Pinch of salt
80 grams of Choc chips

1. Turn your oven on to 180 degrees (fan forced oven) and grease your muffin tray

2. Add your butter to your TM bowl and melt for 2 mins at 60 C on speed 4

3. Add milk, egg, vanilla essence & bananas. Mix for 3 seconds on speed 4

4. Add dry ingredients (except Choc Chips). Mix for 30 seconds on speed 4

5. Add choc chips and mix for 30 seconds of speed 3 REVERSE

6. Spoon into your muffin tin. I find using a tablespoon and a teaspoon the easiest way to fill your tins without dripping it everywhere












7. Bake in the oven for 13 - 15 minutes

8. Scrummy!
